The taste

Dark and full-bodied, closer to coffee than to tea. Earthy, faintly nutty, and dry at the finish where coffee would turn bitter. Low in acid, which is why people who gave up coffee for their stomach tend to get on with it.

The pulp and the seed are different parts of the fruit and taste nothing like each other, so put the smoothie bowl out of your mind. Nobody has ever called this sweet, and we are not going to start.

How to brew it

The factory brews it at one teaspoon to 50 ml, strained the way you would strain coffee. Drip machine, French press, pour-over, percolator, espresso portafilter, or overnight as cold brew. Full guide here.

How it is made

The seed is separated during açaí harvest, washed, dried, and roasted to a controlled temperature rather than by eye. Published research shows that roasting too hot destroys the fibre and polyphenols in açaí seed, while making the powder look more like coffee. Why that matters.

These are figures for the dry grounds, not for a brewed cup. Açaí seed is mostly fibre, and like coffee grounds, most of it stays in the filter rather than ending up in what you drink. A pack holds about 25 servings.
