What happens to the açaí seed after the pulp is scraped off


Mostly, nothing happens to it. It gets thrown away. Around 85% of every açaí berry is the seed in the middle, and the industry that ships the purple pulp around the world treats that seed as the cost of doing business. Brazil discards hundreds of thousands of tonnes of it every year — dumped, piled, sometimes burned.

Our factory exists because of that pile. Here is what happens to a seed that comes to us instead, from the moment the pulp is scraped off to the last gram of leftover — because the leftovers have a story too, and it is the part most people have never heard.

First, where the seed comes from

Açaí grows on wild palms in the floodplains of Pará, and the fruit is brought in by riverside families who have harvested these palms for generations. The pulp — the thin purple layer everyone knows from smoothie bowls — is scraped off close to where the fruit lands, because pulp spoils fast.

What is left behind is the stone: hard, round, about the size of a blueberry, and until recently worth nothing. That is what reaches us, within 36 hours of harvest. The seed used to be the waste. Now it is the product, and it is worth something to the people who bring it in.

What the factory does with it

The short version of the process, in the order it happens:

  1. Washing. The seeds go through a rotating sieve under a water jet. This scrubs off the pulp residue still clinging to them — and that residue is the first leftover, which we will come back to.
  2. Drying. First in the sun on a drying yard, then in a dryer, until a grain moisture meter says the seeds have reached the right moisture for roasting. Measured, not guessed — damp seed stored badly grows mould, and mould is the enemy of this whole category.
  3. Storage. Dried seed waits in ventilated sacks, off the floor, in the dry.
  4. Roasting. To a controlled temperature, with the cooling that follows capped at ten minutes so the roast stops where it was aimed. Why the temperature matters is its own story — over-roast the seed and you destroy the very compounds that make it worth roasting.
  5. Polishing. After roasting, the seed’s papery outer fibre — the factory calls it pelo, the seed’s fuzz — is rubbed off in a modified sieve. That fuzz is the second leftover.
  6. Grinding and packing. The cleaned, roasted seed is milled into grounds and sealed into the pouch with a batch code and nothing else. One ingredient, because nothing else ever enters the building’s process.

The leftovers of the leftover

Here is the detail we like most, and it is the reason this post exists.

A factory built to rescue a waste product produces its own waste: the pulp residue washed off at the start, and the roasted fuzz polished off at the end. Neither goes in a pile. Both are bagged — and both are sold, as fertiliser and animal feed for farms nearby.

So the seed that was thrown away becomes the product, and what the product sheds on its way through the factory feeds fields and animals down the road. The waste stream’s waste stream has customers. Nobody planned that as a marketing line; it is just what a small factory does when it sits close enough to its neighbours to know who needs what.

Why we tell this story plainly

There is a fashionable vocabulary for all of this, and we mostly avoid it. What we can say without decoration is specific: the seed is the majority of the fruit, it was discarded at industrial scale, and a factory in the town where the fruit grows now turns it into something people drink — with byproducts that get used rather than dumped.

That is the whole story. It happens to be true, which is why it does not need inflating.
